José Manuel Baños Rodríguez was born on Oaxaca, Mexico in 1979. Now as Chef of Pitiona, his desire is to transmit through his dishes, the love and devotion he’s got to the land where he grew up. From the valley at the coast and crossing the territory of La Mixteca, his dishes are an absolute journey through the gastronomy and geography of Oaxaca.
José Manuel had in mind a place like Pitiona several years before making his dream true in 2010 after working on some of the best restaurants in the world like El Bulli and Arzak and living in Spain, France and several places of Mexico.
Everything he has learned from living, from paying attention his masters, from his family kitchen, now takes form in Pitiona, where his desire is to become part of the culinary experience of Oaxaca, to both locals and visitors.
